Loaded Baked Potato Salad

Since its almost Thanksgiving I wanted to share some more of my favorite recipes. My dear friend Melanie is probably one of the BEST cooks on earth other than my husband and grandmother, and has the best recipes, one of my favorite recipe is called Hot Potato Salad. Hot Potato Salad is just like a loaded baked potato but you bake it and instead of using a whole potato you use red potatoes diced....yes its loaded with calories but it is absolutely delicious. Directions:
Prep Time: 15 mins
Total Time: 30 mins
Serves 6
  • Cube and boil potatoes with salt.
  • Drain.
  • Crumble bacon and slice onions (including tops).
  • Combine sour cream, pepper and Miracle Whip.
  • Add to potatoes.
  • Add bacon, onions and cheese (reserve some of each for top).
  • Mix with potatoes.
  • Pour into baking dish.
  • Top with reserved cheese, onions, and bacon.
  • Bake 350 for 10-15 minutes (until cheese melts).

Healthy and Easy to make Breakfast dish

OK last week I was on US Weekly Magazine's website trying to catch up on the latest celebrity gossip when I came across a delicious healthy and easy to make breakfast recipe by Martha Stewart. My husband is probably the healthiest person I know so he was happy that I used him as my experiment and he loved it. The recipe is hard-boiled eggs whites with avocado. If you like egg whites and avocado then you will definitely love this recipe. Check out the directions below.

Ingredients

Serves 4
  • 8 large eggs
  • 2 avocados, preferably Hass
  • 1/4 teaspoon coarse salt
  • Freshly ground pepper
  • 1 tablespoon extra-virgin olive oil
  1. Cover eggs with cold water in a large saucepan; bring to a boil. Remove pan from heat. Let eggs stand, covered, 8 minutes; transfer with a slotted spoon to an ice-water bath, and let cool. Peel eggs. Separate yolks from whites (reserve yolks for another use).Tear whites into 1-inch pieces; divide among four bowls.
  2. Halve and pit the avocados. Using a spoon, scrape out pieces; divide among bowls with egg whites. Divide salt among servings, and season with pepper. Drizzle each serving with 3/4 teaspoon oil.
Per serving: 227 calories, 19 g fat, 0 mg cholesterol, 8 g carbs, 190 mg sodium, 9 g protein, 5 g fiber

Strawberry Trifle Cake

My hubs and I are gearing up for our upcoming Thanksgiving trip to see my folks. Almost every Thanksgiving my grandmother cooks everything, but this year her grandchildren will be hosting Thanksgiving dinner for over 50 people. My wonderful sister Dawn, my mother Valerie and my aunt Diane will be the chefs in the kitchen, however, I'm going to make my favorite Strawberry Trifle Cake... Just in case you don't know what a triple cake is...well its traditionally served in a punchbowl. Like other desserts in the trifle family, punch bowl cake consists of a series of layers, including a layer of sponge or yellow cake, a layer of fruit, whipped cream, it can be served chilled. It's one of my favorite dessert.

Hula Hoop Dance Class

Ok this has been an interesting week for me and to top it off I was invited to take a hula hoop dance class, yes you heard me a Hula Hoop class. Initially I thought it was a joke until I did some research and it appears that this is becoming popular. Hula hooping for fitness is fun and apparently a no-to-low impact workout perfect for all fitness levels and ages. I've listed some of the benefits to hula hooping below. Enjoy hooping...

~Happy Birthday To My Husband~

I love birthdays...my husband not so much. He isn't keen on the idea of getting older. To him it's another day but for me I love the idea of being the queen of the day sorta speak. I love being showered with love, presents and mainly sharing my special day with my love ones.

With that being said, I won't post a long blog night but rather relish the remainder of the night in the arms of my birthday king.
